The one smell I love the most, is the sweet, deep smell coming from coconuts. I have quite the collection of coconut based things: lipbalm, bodybutter, hairspray, showergel,...
So it's no surprise that I'm a huge coconut rock - I'm not sure if it's the official name of the cookie, but that's how my mum used to call them - lover. And the best part is, they are extremely easy to bake. So if you're ever craving home made cookies, but nut really in a Martha-Stewart-mood, these rocks are the fastest way to get some instant sweet gratification!
Start to cook:
Two eggwhites (separate the eggwhites from the yellow)
120gr of cane sugar
100gr of coconut flakes
2 teaspoons of coconut flower or ordinary flower
Add the eggwhites and the cane sugar in a pan and put them on a small fire. Now sturr them until your mix turns white.
Turn down the fire and add the coconut flakes, sturr them through your mix and add the teaspoons of flower while continuing the sturring (you should start to feel some numness in your arms right about now :).
Guess what, your almost done right about now. All you'll have to do after this is: take two spoons and make little rocks (see picture), make them as small or big as you please (I say, the more the merrier, so small it is!). Then put them in the oven - which you've pre-heated at 150°C - for about 30 minutes.
