Autumn on a plate

I always love the start of Autumn. The clear blue skyes with a bright yellow sun standing low, the cold but bearable temperatures, a change of clothes (hi there dear sweaters), but mostly a change of food.

Nothing makes me more happy then coming home from the cold outside to the warmth inside and eating something freshbaked - and really really hot - from the oven. And that's exactly what this dish will do for you... Oh, and I almost forgot to mention: it's with pumpkin, so if you're already thinking about what to eat with Halloween, well.. there you go!

You'll need: (for two persons)

1/4 from a small pumpkin or half a butternut, chop in blocks
1 parsnip (For Dutch readers: pastinaak), again chop in blocks
2 carrots, also chop in blocks
1 sweet potato, no blocks this time but slices
2 twigs of time (take the leaves of the branch)
50ml of cream
50gr Parmesan cheese
Pepper and salt

Start to cook babes:
Cook or steam the vegetables separately, until they are cooked-through. (I use a fork to feel if the vegetables are soft, and if I'm not certain, I taste them :) By the way, I only cut the sweet potatoes after I've cooked them.
Now put all the vegetables in an oven dish, except for the potatoes, and ruffle them. add the time, pepper and salt.

Now cover everything with the slices potato, pour the cream above and sprinkle with the parmesan cheese, put it in the oven until it has a nice cheese crust. And then your dunzo. (Off course you can combine it with some meat, like I did. We ate lamb with tomato sauce with it.)
